A tailor-made state-of-the-art winery and olive press combined with specialist skills and human passion provide all the tools needed for an optimal production of the wines, the olive oils and the verjus of Quinta dos Sentidos.

Sentidos Wine

Rigorous yield reduction, attention to every detail from harvesting to fermenting to aging of the wines, an experimental vineyard with 50 grape varieties combined with our dedication and expertise are the pillars of our boutique winery approach.

Sentidos Olive Oil

Based on an extensive farming approach, our olive oils benefit from a natural cycle whereby the olives are protected with white clay during the growth period, picked and selected by hand, milled immediately and the oil extracted with minimal intervention and the solids returned to the soil as organic material.

Sentidos Verjus

With the aim of reviving the use of the acidic juice of unripe grapes in Portuguese gastronomy, we also produce verjus. This is a condiment that was used throughout Europe and the Middle East before the lemon was brought to Europe from Asia. Subsequently, verjus fell somewhat into oblivion.

The mildly acidic verjus is used in the modern kitchen in similar ways to vinegar and lemon juice.

However, the acidity is milder than that of vinegar and the flavour more diverse and finer than that of lemon juice.

Verjus, an ideal complement to our olive oils.

Gifts of Nature

Honey, nuts, dry fruit, herbs and spices – many are the gifts of the Algarvian nature.
