Inspirados numa filosofia de produ\u00e7\u00e3o extensiva, os nossos azeites beneficiam de todo um ciclo natural \u2013 as azeitonas s\u00e3o protegidas com argila natural durante o seu crescimento, sendo colhidas e selecionadas manualmente. Ap\u00f3s esta cuidada sele\u00e7\u00e3o, o azeite \u00e9 extra\u00eddo de imediato, sempre com a m\u00ednima interven\u00e7\u00e3o poss\u00edvel, sendo o baga\u00e7o devolvido aos solos como fertilizante org\u00e2nico.<\/p>\n

Verjus Sentidos<\/h3>\n

Com o objetivo de reavivar a utiliza\u00e7\u00e3o do sumo \u00e1cido de uvas verdes na gastronomia portuguesa, tamb\u00e9m produzimos verjus. Embora se trate de um condimento que era conhecido e utilizado em toda a Europa e M\u00e9dio Oriente, acabou por cair em esquecimento ap\u00f3s a chegada do lim\u00e3o.<\/p>\n

O ligeiramente \u00e1cido verjus \u00e9 utilizado na cozinha moderna de forma semelhante ao vinagre e ao sumo de lim\u00e3o.<\/p>\n

Todavia, a sua acidez \u00e9 mais suave que a do vinagre e o sabor mais diferenciado e delicado que o do sumo de lim\u00e3o.<\/p>\n
